Pantry Challenge #1: Tomatoes & Pasta

Today being a lazy Sunday, I made the simplest of dinners – something easy, quick, requiring few ingredients, and leaving lots of leftovers so that I can take some for lunch tomorrow. Bonus for me – it fits in perfectly with the Pantry Challenge I mentioned last week.

This weeks dish makes use of the following ingredients:

  • Olive oil
  • Tinned tomatoes (1 can diced)
  • Pasta or rice (whole wheat rotini)
  • Olives (couple of chopped kalamata olives)
  • Fresh onions
  • One spice or spice mix (I’m counting garlic as a “spice”)
  • One dried herb or herb mix (last of the fresh basil from the back)

Saute the onions and garlic in the olive oil. Add the can of diced tomatoes and simmer until thickened. Chop and mix in the olives and the basil. Serve over the whole wheat pasta.

The Housemate, who doesn’t believe a meal is a meal w/out meat, added a grilled chopped chicken breast to his. Me? I feasted on the tomatoes and pasta. It would have been lovely with a sprinkle of grated parm cheese, but I’m out and besides, then it wouldn’t have qualified for the challenge!
