Easter Weekend Dinner

Growing up Catholic, Easter was always a big, big weekend for us; the end of 6 weeks of Lenten fasting and denial, given over in a huge feast. Ham, jello salads, deviled eggs (gotta do something with all those dyed Easter eggs), jelly beans, and more chocolate bunnies than you could shake a stick at.

Nowadays I don’t celebrate Easter as a holiday, but I do still enjoy the traditions that accompany the season. This weekend we’ll be buying a ham, making my MIL’s famous Rice & Green Chilies recipe (but with a twist), and generally enjoying what will hopefully be some warm spring weather.

    I don’t celebrate Easter as a holiday either, but I love it because it is the beginning of the Spring season. I love all the foods that are available.

    Our Easter menu looks as such:

    Chicken, sausage and Okra gumbo with rice
    Strawberry spinach salad
    cilantro salad with pepitas
    hummingbird cake
    lemon pound cake with lemon curd, whipped cream and berries
    mini brownie cakes with green frosting “grass” and chocolate eggs (lame, but the kids like them)
    fresh salsas (tomato and mango) and chips
    homemade pepper jelly with cream cheese
    stuffed bacon wrapped jalapenos

    a bit of a hodgepodge, but it includes all of the family’s favorite foods.
