		<description>I don&#039;t celebrate Easter as a holiday either, but I love it because it is the beginning of the Spring season. I love all the foods that are available.

Our Easter menu looks as such:

Chicken, sausage and Okra gumbo with rice
Strawberry spinach salad
cilantro salad with pepitas
hummingbird cake
lemon pound cake with lemon curd, whipped cream and berries
mini brownie cakes with green frosting &quot;grass&quot; and chocolate eggs (lame, but the kids like them)
fresh salsas (tomato and mango) and chips
homemade pepper jelly with cream cheese 
stuffed bacon wrapped jalapenos

a bit of a hodgepodge, but it includes all of the family&#039;s favorite foods.</description>
