Meal Plan Monday – 1

Welcome to the first Meal Plan Monday!

Meal planning is nothing new for me. I’ve always kept a rough meal plan and shopping list in my household Excel file but over the last couple of years it has gotten a little more complex. Zach and I split time between our two houses and so making sure that we each have food for our meals together and for our meals apart – and that there’s sufficient of everything at each house – requires a little more tracking and management than just “rough lists”. I can’t count the number of times this past year that I’ve wound up with 6 containers of yogurt at the townhouse while Zach has nothing at the house!

(And yes, for the record, I do all the cooking and shopping for both homes, with the exception of Saturday morning breakfasts which is Zach’s specialty.)

I’m not sure what sharing planning here is going to look like long term, but here’s the first iteration. Eventually I should be able to link back to recipes and ingredients for each plan as I rebuild the recipe content on the blog!

Jan 8 – Jan 14 Plan

Breakfast: During the week Zach has Greek yogurt with protein powder and I have Greek yogurt with frozen blueberries]. On Saturday Zach will make biscuits, eggs, bacon, and gravy. On Sunday I’ll usual make pecan waffles, although sometimes I’ll switch it up with blueberry pancakes.

Lunch: Usually some combination of the soup or salad I make over the weekend, leftovers, and sandwiches. Every once in a while we’ll order lunch out.

Dinners (from the plan):

  • Saturday: Chicken with hatch chiles relleno
  • Sunday: Chicken stir fry (extra for leftovers)
  • Monday: Me: Air fried tilapia w/ lemon cauliflower rice / Zach: Leftover chicken stir fry
  • Tuesday: Salmon burgers
  • Wednesday: Me: Yakisoba (K) / Zach: Curried chicken w/ cauli, carrots, peas, potato
  • Thursday: Me: leftover curried chicken / Zach: Freezer meal
  • Friday: Oven roasted pork loin, baked or whipped sweet potatoes, asparagus

Batch Cooking: Split pea soup & curried chicken salad(for lunches), and oven stock for use during the week
