Meal Plan Monday 4

This weeks meal plan includes lots of soup. I’m in a soup phase and we’ll just have to deal with it!

Last week’s Friday dinner didn’t happen as we were deep into planning Saturday’s event. We wound up reheating leftovers and making toasted sandwiches, so adding that back into this week’s plan.

I was joking with Zach that now that we have the new dining table at the house, the light in the dining room is perfect for blog pictures, so I’m planning a lot of cooking this week specifically so I can photograph it there and schedule it for later. Those will become freezer meals for later meal plans. Here we go for the first week of February!

Dinners (from the plan):

  • Saturday: Rack of lamb, asparagus, wasabi potatoes
  • Sunday: Leftovers, salad
  • Monday: Soup and salad for me, leftover chicken and farro for Zach
  • Tuesday: Sweet potato and black bean tostadas
  • Wednesday: Cottage pie (ground beef, veggies, mash)
  • Thursday: Me: Leftover soup & salad / Zach: Freezer meal
  • Friday: Chicken breast w/ baked brown rice (spices from farro con pollo)

Batch Cooking: Chicken stock, curried chicken salad, curried ground beef
